This recipe was not created in Vienna, but you will find Wiener Schnitzel in several restaurants all over this wonderful city that we love to visit. Soft inside and crunchy outside, it’s really delicious!

The authentic Austrian  Wiener Schnitzel recipe is normally served with a typical potato salad, sauerkraut and/or a lettuce and tomato salad. In general, the portions are very large and can be shared by 2 or 3 persons, depending how hungry they are. It’s convenient to ask before ordering. Why? Once visiting the Prater Park in Vienna, Luiza, my mother and I, ordered one Wiener Schnitzel for each of us! What a mistake. One would be enough for the 3 of us! Though, it was very tasty as usual.

– 04 clean pork fillets, 5 to 6 oz each (alternatively you can use turkey or veal);

– 02 eggs;

– 3.5 oz breadcrumbs;

– 3.5 oz flour;

– salt and pepper;

– melted butter and vegetable oil;

– lime slices;

This is the Wiener Schnitzel recipe we cook at our home, with pork fillet, the easiest to find in Brazil’s grocery stores and butcheries.

Clean the pork fillets removing all reminiscent skin and cut in steaks as mentioned above. One of the funniest parts of this recipe is to “beat the meat”. Use a steak beater and enjoy working on the steaks until they are thin. Season both sides of the steak with salt and pepper.

Prepare three plates to bread the meat: the first with the flour, the second with the beaten eggs and the third with the breadcrumbs.

You will start passing the flour on both sides of each steak, followed by the beaten eggs (make sure you don’t have dry parts) and lastly, the breadcrumbs. Don’t bother with the mess. Carefully use a fork to stick the bread crumbs on the steak. This will make the breading softer.

In a large pan, put the melted butter and the vegetable oil. Wait until it gets very hot and only then, place the steaks on it.

 

 

 

TIP OF THE AUTHENTIC AUSTRIAN WIENER SCHNITZEL RECIPE: START FRYING THE STEAKS ONLY WHEN THE BUTTER AND OIL GETS REALLY HOT!

Frying the Wiener Schnitzel – Authentic Austrian Wiener Schnitzel Recipe

 The time you’ll fry depends on the thickness of the steaks and the type of meat you will use.First fry one side of the steak for 2 to 4 min, until it gets golden brown. Turn it with a spatula and do the same process in the other side of the steak. Do not use a fork during the frying process!

Take the steaks out and put them over a paper towel  and apply some pressure to dry them.

Serve with lime slices.

 

 

TIP OF THE AUTHENTIC AUSTRIAN WIENER SCHNITZEL RECIPE:  IT IS DELICIOUS IF SPRINKLED WITH SOME LIME DROPS!

 

Wiener Schnitzel goes very well with baked potatoes, potato salad or mixed salad.

Do you want to cut some carbs? Instead of frying, bake it. It is a great option, but  it will not look as great and it’ll loose some of the tastiness.

It’s also a great option to use this recipe and add tomato sauce, mozzarella and ham to cover the steaks. It is delicious, but it is not a Wiener Schnitzel…

So, if you want an original recipe, keep it simple.

 

 

Traveling across Germany and Austria you will have plenty of opportunities to taste a Wiener Schnitzel. We loved the ones at Hofbrauhaus in Munich and at Prater Park in Vienna.
